Course Objectives

Course participants will gain insights on how food pathogens gain entry into and grow on food products or food processing chain, and the implementation of ISO 22000:2018 to safeguard food safety. Through hands-on practical sessions, participants will also gain confidence in developing in-house food testing procedures to conduct microbiological food testing on their own food products using Rapid microbiological methods.

Course Description

Participants will be able to acquire:
- Basic techniques in microbiology
- Microbial safety concerns specific to different foods
- Usage of aseptic techniques and their importance
- Total plate count in food samples
- Categorization of microorganisms based on Gram staining and other biochemical tests
- Molecular techniques in food safety
- 3M rapid microbial testing methods such as Salmonella Express Petrilfilm, yeast and mould count, aerobic count and lactic acid bacteria count

Rapid microbiological methods provide a fast and cost-effective alternative, allowing companies to perform the bulk of their microbiological testing in-house. These methods allow for significantly reduced costs through the establishment of low-cost laboratories and the application of simple methods that can be performed by personnel without extensive laboratory experience or training.

ISO 22000:2018 is a food safety management system (FSMS) used by organizations across the food chain to help deliver food that is safe for consumers.

Rapid microbiological methods using 3MTM PetrifilmTM Rapid Plates will reduce the waiting time for results, are easy to interpret, accurate and simple. 3MTM PetrifilmTM Count Plates are accredited with AOAC, ISO 16140 & AFNOR certification.
